A Little Bit of Everywhere on One Plate

Why our menu tastes like Sydney — and why that means it tastes like everywhere.

Ask where our food is "from" and the honest answer is: a lot of places at once.

That's the Sydney thing. The city is a melting pot of nationalities, and you taste it everywhere. Not one dish per country, lined up politely — but different countries showing up inside the same plate.

How a city ends up on a menu

Sydney grew in pockets. Whole neighbourhoods of first-generation migrants, each bringing their own food with them. One street leans Portuguese, another Vietnamese, another Italian — and the cafés grew out of that.

So when someone opens a kitchen there, a bit of their own background ends up on the menu. Then the next place takes a little inspiration, adds their own roots, and passes it on. Layer after layer.

That's the food we grew up with. And it's the food we brought to Zeeburgereiland.

What that looks like in the morning

It's less "a dish from country X" and more a quiet mix of influences in one go.

One of our plates leans Italian — a bit of nduja, some pecorino, and suddenly breakfast has an accent. Another starts from çılbır, a classic Turkish-style egg dish, and drifts somewhere new from there. Some things are pure brunch classics. Others might read as a little unexpected, a little exotic — in the best way.

None of it is fusion for the sake of it. It's just what happens when you cook the way a whole city taught you to: borrow what inspires you, keep it honest, put it on a good plate.

Honest plates, good parts

We're not piling up enormous platters to look impressive. Good parts, honest parts, local ingredients wherever we can get them.

The mix is the point. A little bit of everywhere — made here, in our corner of Amsterdam, the way we'd make it for our own families.
